Elvira M. Simmons August 28, 1963 - January 24, 2021

Elvira began her life in Chula Vista, CA where she was born in 1963. She was the fifth of six loving siblings who cared and looked after her. Elvira grew up and attended school in Chula Vista, CA where she made many friends and developed her love of animals. After graduating high school she made her way out into the world where she met the love of her life Denny Simmons. They married in a small ceremony on June 19, 1987. After getting married, Denny and Elvira moved to Escondido, CA, where they would live for thirty years, to start their family. They raised two daughters, Ashely and Jordan, and adopted Elvira’s beloved pets: Cesar, Romeo, Coco and Kitty. In 2019, Denny and Elvira moved to Eagle, ID to enjoy the outdoors and hobbies.

She is survived by husband Denny, daughters Ashley and Jordan, dogs Romeo and Coco and her sister Isabel Chrislibe and brothers Hector, Armando and Mario Salgado.

Elvira was proceeded in death by her father and mother Henry and Carolina Salgado, brother Robert Salgado.

A private interment will be held at Dry Creek Cemetery, Boise, Idaho.

    I am so sorry to hear of Elvira’s passing. I’ll never forget her wonderful cooking, welcoming spirit and how warm and caring she was. I always felt so welcomed every time I went to the family home and feel honored that I had the ability to not only know her but to have the family as some of my best friends. I send all my love to the Simmons family.

    Elvira my dear friend, I cannot believe you are gone. How many times did we laugh about the crazy shenanigans at work, talk about our love for our fur babies and gardening, or share silly pictures and jokes. You will be so greatly missed. Your favorite thing was to be at home, tending your garden and cooking and baking all those wonderful things for your friends and family. You brought grace to every home you lived in. I am truly glad you had some time to enjoy your new home in Idaho; you made it beautiful and I know how much it meant to you. To Denny and the girls – your sorrow and pain is deep. But please remember that Elvira is now home with her parents and brother. And when the time for mourning is over, keep the memories close to your heart, and take comfort in knowing you will all be together again one day.

    I’m so heartbroken to hear of the sudden passing Of Elvira.
    I’ll always remember her Quick wit‘s, intelligence, smile, and of course her awesome cooking.
    If it wasn’t for Elvira I would have never met my wife it’s is truly an awesome story of how it all came about. To my true friend Denny I can’t imagine what you and your daughters are going through. Elvira will always have a special place in my heart and soul for ever.

    There are no words that can express my sorrow for your loss. Elvira was a beautiful, caring and selfless person and I am forever grateful that I got to know and spend time with her.
    I will treasure our times on FaceTime talking about Mexican food, our love for shredded beef and our conversations about the latest items we were looking at when going to HomeGoods.
    Please know I am here to listen, comfort and lean on during this difficult time.

    Although we cannot find the words to express our sentiments at this time, the following poem helped us paint a beautiful picture of a beautiful person named Elvira:

    My Little Butterfly
    Today a little butterfly flew by me.
    I thought to myself where have you been little butterfly.
    You come into this world as a cocoon all by yourself and blossom into
    this beautiful butterfly and fly off to see the world.
    What you don’t realize little butterfly as you flutter through your days
    is how you touch those around you in your soft gentle way.
    You don’t even realize the wonder and awe you create around you.
    she fluttered her wings toward me as if she was waving good-by as she
    headed towards the horizon.
    She looked very happy and content as she went on her way, as if to say
    to me “Don’t worry I’ll be okay”.
    I was sad to see her go for she had touched my heart in such a way that
    I knew my life would never be the same.
    She had left an imprint of all the beauty life has to offer.
    I knew each time I looked at another butterfly or horizon I would
    remember our moment in time when it was only her and I.
    I knew I would be a better person all because this little butterfly flew by

    Dearest Denny, Ashley, and Jordan,

    We are absolutely shocked and extremely saddened to learn of your unexpected–and unimaginable–loss. We sure enjoyed Elvira’s/your mom’s quick wit, our laughter together, and we will cherish the fun memories with her forever! She ROCKED everyone’s world! She has a very special place in our hearts. God has called her home to be His Feisty Angel in Heaven, for sure!
